Mastic for a cake at home: the simplest recipe
Culinary mastic is truly a universal material. It can be used both for creating figures and other ornaments, and for tightening a cake. And an incredibly large amount of materials from which mastic can be made( from chocolate to marshmallow) and the lack of strict proportions allow you to experiment with this mass and create your own unique and perfect recipe for you. In this master class we will tell you how to prepare mastic for a cake at home from chocolate and sugar syrup. This will save you from long mixing in sugar powder and keep your tables( and aprons) unusually clean. Moreover, we will immediately tell you how to make a very beautiful ornament for the cake from the mastic - mother-of-pearl hearts.
Ingredients:
1. White chocolate - 150 grams
2. Four teaspoons of glucose syrup( or honey)
3. Sugar powder
4. Pearlescent powder
5. Starch( for those who do not like very sweet)
Preparation:
- Melt the chocolate in a water bath. Do not overdo it, otherwise as a result, the mastic will give bitterness and have an unpleasant burnt taste.
- We will add the pearl powder to the necessary amount of sugar and how it should be resumed.(for decorating ready-made "hearts", if you have other plans for mastic - this step you can skip)
- By this time the chocolate should already melt, the mass should be homogeneous, without slices or lumps.
- Add the syrup.
- Mix well with a spoon.
- When the mass starts to collect in a ball, then we get in the way with our hands, at the same time squeezing out excess fat( a feature of only white chocolate, if you use dark, you can skip this step).
- As a result, we get an elastic mass for modeling.
- Roll the mass into a flagellum and cut it into pieces.
- Form the pieces into balls. And after that - in the cones. We cut a wide part of the cone and give it a heart shape.
- We roll hearts in mother-of-pearl sugars.

Useful advices
I would like to make some useful comments on the storage of mastics.
- Ready-made figurines should be stored either in a separate dry box, or completely wrapped in a film, otherwise the condensate in the refrigerator can spoil them.
- Mastic can be stored for two weeks in the refrigerator, up to several months in the freezer.
