    Eggplant cut along into halves. Gently remove the middle of the spoon and chop it finely. The remaining "boats" of eggplant put in a shape or frying pan with high sides, grease with vegetable oil, salt and bake in the oven for 10-15 minutes at a temperature of 220-230 degrees.

    Cut the onions finely and put them in a frying pan with vegetable oil. When the onion turns golden, add to it the Bulgarian pepper, peeled from seeds and cut into thin strips. Then add the eggplant flesh, salt, pepper, add spices to your taste and fry until the eggplant pulp becomes soft.

    From tomatoes to make a mashed potatoes. This can be done with a blender, or you can simply rub the tomatoes on a large grater. Add the tomato puree in a frying pan to the vegetables and simmer all together for 5 minutes.

    Champignons fry separately in vegetable oil. Mix the mushrooms with the vegetable mass.

    Put the prepared mass in halves of eggplant. On top, add mayonnaise and sprinkle with cheese, grated on a large grater, and chopped herbs.
