The basis of any puff is a puff pastry. The way of its preparation can be found in any cookbook. But to make it according to all the rules, you need to spend a lot of time.
Fortunately, now there is an opportunity to buy a ready-made puff pastry in the store, which is offered in various variations. This way of purchasing a test will facilitate the process and help save cooking time.
To prepare the puffs according to our recipe, you will need:
- 500 g yeast puff pastry;
- 300 g cottage cheese 5-18% fat content;
- 1 chicken egg and yolk;
- 2-3 items of l.raisins;
- 2 tsp.flour;
- 1 packet of vanilla sugar( 10 g);
- 4 items of l.white sugar;
- 1 lemon( peel);
- 0.5 tsp.salts;

Take the dough out of the freezer for half an hour before rolling. Puff pastry should not be thawed too much - it will become sticky, and puffs may not rise when baked and will be stiff.
Pour the raisins with boiling water and leave for 15 minutes. Mix cottage cheese with two kinds of sugar, a pinch of salt and grated lemon rind. Express the infusion with soggy berries, roll them in flour and put them in the filling with the egg whipped into a foam. Thoroughly mix everything up until the components are evenly distributed.
Roll the dough strips to a thickness of 5 mm. Gently cut them with a sharp knife into an equal number of parts. Put on half the resulting rectangles of 1 tbsp.curd and lightly moisten the edges with water.
Make 3-4 short cuts across the center line of the remaining tortillas and cover them with stuffed brethren. Spread the back side of the spoon along the edges of the raw slices to glue, or press with your fingers.
Preheat the oven to 180 C. Cover the pan with parchment paper and generously grease it with vegetable oil. Spread the raw dough products on it, leaving 2-3 cm between them. Lubricate them with egg yolk with the help of a culinary brush. Cook the puffs with cottage cheese for 25 minutes.
Cottage cheese rolls
You can give the slices absolutely any shape. Try to do so:
Roll out the dough layer, bought in the store, grease it with the prepared stuffing - curd or bought cottage cheese mass. You can sprinkle the grated chocolate on top.
Then the dough layer is folded into a tube and cut across - it turns out a kind of mini-rolls with cottage cheese. Do not do large pieces - when baking they will increase in size, enough width of such rolls - 2 cm.
. The free end of the dough on each of the pieces must be turned down so that it does not turn when baking. Cover the tray with paper. Do not use foil when baking such rolls - the cottage cheese will necessarily stick to it and burn. Rolls are baked for about 20 minutes.
