Recipes from kohlrabi
Kohlrabi contains a large number of polysugars, there are more vitamins in it than in many fruits. It is recommended for dietary nutrition, especially for people with high blood sugar.
To diabetics, kohlrabi replaces potatoes. Because of its high calcium content, it is especially recommended for children and the elderly.
Kohlrabi can be used instead of radish in salads, and also prepare a variety of vegetable dishes from it. The kohlrabi ovum should be previously cleaned, as the skin is rather rough.(Further in the recipes, this is no longer stipulated.)
Kolrarabi salad with sour cream
1 kohlrabi stalk, bunch of dill, 2 ct spoon of sour cream, salt to taste.
Kohlrabi grate on a large grater or shredded with straw, salt to taste. Wash, drain water, then finely chop dill and sprinkle kohlrabi. Serve with sour cream. If instead of sour cream to use mayonnaise, then you can not salt.
Kolrabi with garlic
1 kg kohlrabi, 3-4 cloves of garlic, 4 apples, 2-3 tbsp.tablespoons vegetable oil, 2 tbsp.spoons of sliced green parsley, salt to taste.
Grate on a large grater kohlrabi, chop apples, let garlic through garlic or finely chop, crush with salt. Wash, drain and finely chop the parsley. Mix everything, salt to taste and season with vegetable oil.
Salad with kohlrabi with fresh cucumber and tomato
0,5 kg kohlrabi and fresh cucumber, 2 red tomatoes, bunch of dill, 2 tbsp.spoons of canned green peas, 2-3 tbsp.spoons of vegetable oil( or mayonnaise), salt to taste. Cut into thin kohlrabi and cucumber slices. Wash, dry on a towel and finely chop dill.
All mix, adding green peas, salt to taste, season with vegetable oil. Cut the tomatoes in circles and decorate the top of the salad.
Salad with kohlrabi with apples
1 kg kohlrabi, 2 apples, a bunch of parsley, 1 cup kefir, salt and sugar to taste.
Chop kohlrabi and apples, chop parsley finely, add to kohlrabi. Salt and add sugar to taste, fill with kefir( instead of it you can use vegetable oil, mayonnaise, sour cream).
Vegetable soup with kohlrabi
1 kohlrabi, 1 carrot, 1 head of onions, 2-3 potatoes, greens and salt to taste.
Put on the fire 1.5 liters of water, until the water boils, clean and cut into small cubes potatoes. Dip it into boiling water.
Cut into kohlrabi cubes and add to the soup. Shred the carrots and fry in vegetable oil, add to the soup. Chop onion and fry in vegetable oil, add to the soup. Salt to taste. Finely chop the greens and add to the plates before serving.
You can add sour cream or tomato paste to the vegetable soup, but it should be boiled with soup for 2-3 minutes.
On note
When cooking vegetable soups, the first potato is always laid first and only then, when it is slightly boiled, other vegetables, especially beets, pickles, sauerkraut, tomato paste or tomatoes, otherwise the potatoes will get an unpleasant taste.
Do not forget that from kohlrabi you can cook fresh soup, to taste exactly the same as from cabbage cabbage. At the same time, kohlrabi grows rapidly and appears on our kitchen gardens for 2 months before cabbage cabbage, suitable for cooking fresh cabbage soup.
Pancakes from kohlrabi
1 kohlrabi, 1 egg, 1 -2 tbsp.spoons of flour, vegetable oil for frying, salt to taste.
Grate on a large grater kohlrabi, add raw egg, flour, vegetable oil, salt to taste, mix thoroughly. Heat the frying pan, grease with vegetable oil and bake pancakes. To make the fritters not burned, the oil in the pan should be a little, for this it is convenient to use a piece of peeled potatoes, planted on a fork. Dunk the potatoes in vegetable oil and wipe the pan before each serving of pancakes.
Vegetable ragout with kohlrabi
The basis of this stew is kohlrabi, and it should be at least 50-60% of the total weight of vegetables.
The rest of the vegetables should be taken a little. Everything( except for beets and potatoes) that you have at hand is all right: carrots, turnip, rutabaga, pepper, tomato, including green, eggplant, onion, zucchini( or pumpkin).
All vegetables should be cut into small cubes or straws, add salt, mix and stew until ready on vegetable oil under a lid on a small fire.
Kohlrabi fried in an egg
1 kohlrabi, 2 tbsp.spoons of tomato paste, 1 egg, vegetable oil( or cream margarine) for frying.
