Brewing tea rules
There are many ways of brewing tea. Some of them are widely known, others are original. Some know all the rules of brewing, up to the evaluation of boiling water, while others enjoy tea in disposable bags.
In the book about tea, I found it necessary to put the material contained in the books of specialists on tea and tea procedure.
First, a few practical tips for cooking, mainly black tea.
Water for tea should be without excess of mineral salts. Particularly good is spring water, mountain water. Tap water is best defended for 8-10 hours, so that the smells of chlorine and metal evaporate. Do not use for boiling water re-boiling.
Porcelain kettle rinse with hot water, fill it with tea( for a kettle with a capacity of 250 ml - 10 grams, for a half liter - 20 grams, for a liter - 40 grams), pour boiling water over two thirds, close the lid and cover with a linen napkin or towelprevents the volatilization of the aromatic substances contained in the brew. You can put the kettle on a hot samovar. After 4-5 minutes, fill the kettle with hot water, after which the tea leaves can be poured into cups.
The preparation of tea, and tea drinking in our people is connected with a number of traditions. One of them is boiling water in a samovar. It is convenient to pour boiling water into cups;tea, boiled with boiling water from a samovar, is more delicious than from a kettle, pots.
Serve tea in cups on saucers or in glasses with coasters. Pour the tea leaves( 50 ml) and top up with boiling water( up to 200 ml).The temperature of the tea when serving should be at least 70 ° C.
It is better to brew the tea of the desired strength and do not top up it with boiling water. To do this, fill the teapot with a teaspoon of dry tea with a glass of water, plus 1 teaspoon, or 25 liters of dry tea per liter of water. Thus, the medium-strength welding is obtained.
You should not cover the kettle with tea-dolls or mattresses or pillows - tea after brewing should not be done. And in no case can not put the kettle with brewed tea on the fire: the cooled and reheated tea almost completely loses its qualities.
Another tradition associated with tea drinking is the use of special services. We invite guests to a cup of tea, and this has its own meaning. The cup has advantages over the glass: it does not need such an additional device as a cup holder, the surface area of the liquid in it is larger, so you can drink even very hot tea from the cup.
Tea should be poured into dry cups without topping up to 1-1.5 cm.
VV Pokhlebkin believes that you can drink tea hot enough, but do not burn them. The pharynx should be very small, and it is best not to swallow the tea at once, but hold it in the front part of the mouth and even rub your tongue against the palate and the upper gum, and soak the tea. It will not only help to taste the taste of tea, but also prevent the ingress of too hot liquid into the esophagus and stomach.
You can drink warm tea, but not below 18 ° C, because with further cooling, its aroma disappears completely, and the taste is significantly weakened. You can not also leave tea for a long time open in a cup, the more you can not pour it into a saucer - this will dramatically increase the surface of evaporation and, therefore, will not only enhance cooling, but also will weaken the fragrance.
